Mac n Cheese Bites

Mac n Cheese Bites (Makes 6-7 bites)

What could be more indulgent than home-cooked mac n cheese? Deep-fried mac n cheese bites! These little parcels of cheesy joy are a fantastic way to use up your leftover mac n cheese, and trust me—everyone will love them. Whether you're making them with leftovers or cooking up a whole fresh batch just for this, they're always a crowd pleaser in our house!

The recipe below is for about a quarter of an oven dish of leftovers (I got around 6 or 7 bites), but feel free to adjust the quantities based on how much you're making. Let’s be honest—you can never have too many of these beauties.

Ingredients:

  • Leftover mac n cheese
  • 1 egg
  • 50ml milk (just enough to whisk with the egg)
  • 50g plain flour
  • 100g Ruskoline or panko breadcrumbs (homemade breadcrumbs work just as well if you're on a budget)
  • 600ml sunflower or vegetable oil (or enough to fill your pan for deep frying)

Prepare Your Bites

                            

Start by taking your leftover mac n cheese out of the fridge. This works best when it’s cold and has had time to set, making it easier to handle. If you want to see a recipe for a delicious Mac n Cheese, check it out here.

Cut your mac n cheese into roughly 3cm x 3cm cubes (don’t worry if they're a bit smaller or larger—they’ll still turn out great).

Optional cheesy tip: If your cubes are holding together well, make a small incision in each one and pop in a tiny slice of cheddar for extra gooeyness. If your mac n cheese feels a bit fragile, don’t worry—just skip this step!

Coat the Bites

      

Time to coat these bites!

  1. Crack the egg into a bowl, add the milk, and whisk together.
  2. In a second bowl, place your plain flour.
  3. In a third bowl, add the Ruskoline or breadcrumbs.

Now, take each mac n cheese cube and coat it fully in the flour. Shake off any excess, then dip it into the egg mixture, making sure it's fully covered. Finally, transfer it to the breadcrumbs and give it a thorough coat. If you're not frying right away, pop the bites back in the fridge to keep them firm.

                   

Fry the Bites

                         

Heat your oil to about 175°C. Using tongs, carefully place each bite into the oil. Fry them for 3-4 minutes, or until they turn a gorgeous golden brown.

Once they're cooked, use the tongs to remove them from the oil and place them on some kitchen paper to soak up any excess oil.

Serve and Enjoy

                               

That’s it—they’re ready to serve! I recommend enjoying these with a side of sweet chilli sauce for dipping. These crispy, gooey bites are always a hit, and I guarantee they'll disappear quickly!
